Apple pie with confectioner’s cream

Preparation

Confectioner's cream:

Boil ¾ of the milk + 75 gr sugar. Mix 120 g of the vanilla powder with 75 gr. sugar and then add the other ¼ milk. When the first mixture is boiling, mix the cold one through it. Make it boil again while stirring.

Step 3

Apple pie:

Roll out the puff pastry with a thickness of 3mm and stuff it into the baking tin. Prick holes in the bottom of the pastry with a fork. Put a layer of cream on it. Cover the cream with pieces of apple and almond chips. Make the pie golden brown with the whisked yellow of an egg. Bake the pie in the oven at 210°C for about 25 min.
