Cod à la Portugaise

Preparation

Step 1

Rinse the cod fillets

Step 2

Butter a roasting tin or an oven cocotte

Step 3

Fry the onions slightly and divide them over the roaster

Step 4

Add the chopped garlic

Step 5

Place the cod fillets on top of the onions

Step 6

Pour the wine over the cod fillets

Step 7

Season with salt and pepper

Step 8

Clean the tomatoes and chop them up into large pieces

Step 9

Divide the tomatoes over the cod fillets

Step 10

Chop up the parsley

Step 11

Let the cod fillets start to boil and poach them further in the oven until they are done

Step 12

Sprinkle the fish with the chopped parsley

Step 13

Put the cod on the plates and pour some of the poaching broth over it

  • 4 cod fillets of 250gr /fillet
  • 1 chopped onion
  • parsley
  • 2 dl 2dl white wine
  • 1 chopped up clove of garlic
  • 100 g butter
  • salt and pepper
