Prepare the mussels in a separate casserole and save the stock for later.
Fry the prawns in a separate pan.
Peel the onion and cut it into little pieces. Take the paella pan and fry the pieces of onion in a little bit of butter.
Cut the chicken into pieces and fry it together with the onions. Add the peeled tomatoes.
Cut the Chorizo sausage into pieces of 2cm and add it to the tomatoes and chicken.
Next step you add the rice and saffron.
Cover the paella pan over with silver foil. Before the liquid has been fully absorbed, add a little bit of stock, one small spoon at a time. Leave simmering for 5 minutes.
Meanwhile clean the squid and cut it into rings. Add the squid, peas and corn to the simmering dish.
Remove the mussels from their shells but leave some as decoration.
Finally you add the prawns and mussels to the dish. Leave the whole dish covered with silver foil simmering for another 3 minutes at a low temperature.
Finish the dish by adding the mussels as decoration.

- 6 fillets of chicken or turkey (1 fillet/person)
- 1 kg mussels
- 250 gr prawns
- 3 pieces of fresh squid
- 1 Chorizo sausage
- 3 bags of rice (rice with a cooking time of 8 minutes)
- Salt and pepper
