Poached eggs with mashed potatoes and smoked salmon
Cook the potatoes and mash them. Add some pepper and nutmeg. Slice the salmon thinly and add it to the mashed potatoes. Add a small amount of chives. Break the eggs into the recipients and poach them in boiling water with a little vinegar (+/- 2min). Serve the mashed potatoes on the plate and put a poached egg on the mashed potatoes. Sprinkle with chives and parsley.
Serve with a little spinach, if liked.
- 6 large potatoes
- 1 slice of smoked salmon
- salt, pepper, nutmeg
- 4 eggs
- 4 sprigs of parsley
