Scallops with spinach

Ingredients

  • 8 scallops
  • 2cl oil
  • 500gr fresh spinach
  • 50gr shallots
  • 1/2 garlic clove
  • 1.5dl cream
  • salt and pepper

Directions

  • Cut the scallops in half
  • Dry them carefully with a kitchen towel
  • Clean the spinach and melt it in butter (à l'anglaise)
  • Clean the shallots and the garlic and chop them into very small pieces
  • Fry the chopped shallots slightly in a little butter
  • Add the spinach and the garlic
  • Pour the cream over it
  • Let the cream boil until the sauce thickens
  • Spice up with a little salt and pepper
  • Grill the scallops for a very short time in an oven or in a grill pan
  • Serve the grilled scallops on a bed of spinach
