Directions
- Cut the scallops in half
- Dry them carefully with a kitchen towel
- Clean the spinach and melt it in butter (à l'anglaise)
- Clean the shallots and the garlic and chop them into very small pieces
- Fry the chopped shallots slightly in a little butter
- Add the spinach and the garlic
- Pour the cream over it
- Let the cream boil until the sauce thickens
- Spice up with a little salt and pepper
- Grill the scallops for a very short time in an oven or in a grill pan
- Serve the grilled scallops on a bed of spinach
