Directions
- Rinse the cod fillets
- Butter a roasting tin or an oven cocotte
- Fry the onions slightly and divide them over the roaster
- Add the chopped garlic
- Place the cod fillets on top of the onions
- Pour the wine over the cod fillets
- Season with salt and pepper
- Clean the tomatoes and chop them up into large pieces
- Divide the tomatoes over the cod fillets
- Chop up the parsley
- Let the cod fillets start to boil and poach them further in the oven until they are done
- Sprinkle the fish with the chopped parsley
- Put the cod on the plates and pour some of the poaching broth over it
