Cod à la Flamande

Ingredients

  • 4 cod fillets of 250gr/fillet
  • 100 gr butter
  • 1 lemon
  • 100gr chopped shallots
  • 20gr chopped parsley
  • 1dl white wine
  • 20gr breadcrumbs
  • salt and pepper

Directions

  • Butter an oven roaster or an oven cocotte and sprinkle the chopped shallots in it
  • Put the rinsed and cleaned cod fillets inside your oven dish
  • Pour the white wine over the fish
  • Put a few slices of lemon on each cod fillet
  • Season with salt and pepper
  • Sprinkle the chopped parsley over the fish
  • Put the oven roaster or the cocotte in the oven for about 20min
  • Put the cod fillets on a plate
  • Reduce the poaching broth and thicken it with breadcrumbs
  • Pour a little sauce over each cod fillet
