Shrimp soup

Ingredients

  • 200gr shrimp (not pealed)
  • 5cl oil
  • 30gr green celery
  • 1/2 onion
  • 1/2 carrot
  • 2cl brandy
  • 1dl white wine
  • 1L fish broth
  • 1 fresh tomato or 15gr tomato paste
  • Bouquet garni
  • 20gr rice
  • Salt and pepper
  • 20gr peeled shrimp
  • 3cl cream

Directions

  • Sauté the shrimp in oil
  • Add the thinly sliced carrots, celery and onions
  • Flambé with brandy and put out with white wine
  • Pour the fish broth over it
  • Add the bouquet garni and the tomato
  • Make the shrimp soup boil and add the rice
  • Let the soup boil until it is done (about 30min)
  • Mix the soup
  • Put the soup through a strainer
  • Season if necessary
  • Pour the soup into a soup bowl
  • Finish the soup with the peeled shrimp, some cream and a splash of brandy
