Shrimp soup

Preparation

Step 1

Sauté the shrimp in oil

Step 2

Add the thinly sliced carrots, celery and onions

Step 3

Flambé with brandy and put out with white wine

Step 4

Pour the fish broth over it

Step 5

Add the bouquet garni and the tomato

Step 6

Make the shrimp soup boil and add the rice

Step 7

Let the soup boil until it is done (about 30min)

Step 8

Mix the soup

Step 9

Put the soup through a strainer

Step 10

Season if necessary

Step 11

Pour the soup into a soup bowl

Step 12

Finish the soup with the peeled shrimp, some cream and a splash of brandy

  • 200 g shrimp not pealed
  • 5 cl oil
  • 30 g green celery
  • 1 onion
  • 1 carrot
  • 2 cl brandy
  • 1 dl white wine
  • 1 l fish broth
  • 1¬†fresh tomato or 15gr tomato paste
  • Bouquet garni
  • 20 g rice
  • Salt and pepper
  • 20 g peeled shrimp
  • 3 cl cream
