Spaghetti with mussels


Step 1

Cook the spaghetti in a large amount of salted boiling water and a splash of olive oil

Step 2

Rinse and clean the celery and the onion and chop them into very small cubes

Step 3

Rinse and clean the mussels several times

Step 4

Stew the mussels with the celery, the onion, the white wine and the fish broth under a closed lid until they are done

Step 5

Take the mussels out of their shells

Step 6

Bind the mussels' broth with roux

Step 7

Finish the sauce with a little cream and season with salt and pepper

Step 8

Mix the spaghetti with olive oil and season it

Step 9

Add the mussels to the sauce

Step 10

Serve the spaghetti in a large bowl

Step 11

Put the sauce and the grinded cheese in separate bowls on the table


  • 200 g spaghetti
  • 200 g mussels
  • 20 g onion
  • 1 stem of celery
  • 2 dl fish broth
  • 1 dl white wine
  • 60 g roux 25gr melted butter, 35gr flour
  • 80 g grinded gruyère (Swiss) cheese
  • salt and pepper
  • a splash of cream
  • 5 cl olive oil
