Tomato soup with mascarpone
Copthe onion and garlic
Heat some oil in the Beka Focus stockpot
Fry the onion and garlic for about 2 min.
Cut the tomatoes into cubes. Add the diced tomatoes and tomato paste to the onion and garlic. Let everything simmer about 5 minutes.
Add the chicken broth, let it boil
After ca. 10 min. gently cooking, add the mascarpone and stir well.
Mix it untill it is a soup and sieve it.
Finally, add the Red pesto, keep stirring for about 2-3 min.
Season with salt & pepper, add some basil

- 150 gram tomato paste
- 1 kilo Roma tomato
- 1 litre chicken broth
- 250 gram mascarpone
- 100 gram red pesto
- 10 gram fresh basil
