White wine sauce


Step 1

Let the white wine, the fish broth and the shallots boil in until 2/3ds are gone

Step 2

Add the cream

Step 3

Let it boil until it thickens and becomes a sauce

Step 4

Season with salt, pepper and cayenne pepper

Step 5

Add a little lemon juice

Step 6

If liked, put the sauce through a strainer
