Zucchini wrapped in smoked ham
Preheat the oven to 180°C.
Cut the zucchini in pieces (lengthwise) and remove the seeds.
Place the zucchini in an oven roaster.
Sprinkle them with enough olive oil.
Season with pepper. No need for salt, the salty ham will take care of that.
Add fresh thyme.
Mix everything to make sure the herbs and olive oil are distributed properly.
Grate some lemon zest over the zucchini. It’ll give that extra spark to the appetizer.
Wrap the zucchini with the ham.
Roast the zucchini in the oven for 10 to 15 minutes or until they begin to brown.
Remove from the oven, place on a platter and serve.
