Crispy Rice Salad

Fresh, filling, and healthy. If you’re looking for an easy lunch that’s not your typical salad, this crispy rice salad will keep things fun, with interesting textures. Prepared in our Cicla frying pan that’s easily transferable to the oven, this versatile salad works with a vegetarian base. Switch out the honey with agave syrup to make it vegan, or add extra protein to bulk it up. Top it off with some chili crisp or hot sauce for an extra kick.

Crispy rijstsalade

Preparation – step by step recipe

  1. If you plan on using freshly cooked rice, heat up some water in a Cicla saucepan, and cook the rice according to the package instructions.
  2. Preheat the oven to 180 °C.
  3. While your rice is cooking, chop up the shallots and mince the garlic.
  4. Add a tablespoon of neutral oil to your Cicla frying pan. Add the shallots and garlic and sauté over a medium heat until soft.
  5. Once the rice is cooked, add it to the frying pan along with the sweetcorn.
  6. Season with sesame oil and soy sauce.
  7. Transfer the pan to the oven and bake for 20 minutes at 180 °C.
  8. In the meantime, chop the tomato, cucumber, avocado, spring onions, and chili pepper.
  9. Remove the pan from the oven after 20 minutes and allow it to cool until the rice is lukewarm.
  10. Transfer to a bowl and add the chopped vegetables.
  11. Add the honey and a squeeze of lime juice. Top with some chili crisp or hot sauce if desired.
  12. Mix, serve, and enjoy.

Optional

  • Feel free to add or omit vegetables as desired.
  • Use hot honey for an extra kick.
  • Add some bacon bits as extra protein.

  • 125 g rice (freshly cooked or day-old)
  • 2 shallots, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of sweetcorn
  • 1 tomato
  • 1 cucumber
  • 1 avocado
  • 2 spring onions
  • 1 chili pepper
  • 1 tbsp neutral oil (sunflower, peanut…)
  • 1 tsp sesame oil
  • 1 tbsp thin soy sauce
  • Juice of ½ lime
  • 1 tbsp honey
  • Optional chili crisp or hot sauce
