Endive tarte tatin

Who said tarte tatin was only for apples? Sweet, savoury, and slightly bitter thanks to the endive, you’re experiencing tarte tatin in a whole new way. The best part? It’s way too easy to make.

Preparation – step by step recipe

  1. Preheat the oven to 180°.
  2. Take the puff pastry out of the refrigerator.
  3. Cut the endive heads in half.
  4. Heat your Evolution frying pan and melt the butter in the pan.
  5. Brown the endives on both sides, flat side down first.
  6. Turn the heat down slightly and place the lid on the pan.
  7. Let them simmer for 10 minutes.
  8. Remove the lid from the pan and deglaze with the balsamic vinegar.
  9. Add the sugar and let the endive caramelize.
  10. Flip the endives onto their flat side.
  11. Unroll the puff pastry over the pan, press down lightly, and fold the edges in slightly.
  12. Make a small slit in the center of the pastry.
  13. Move your Evolution frying pan to the oven (remove the handle!) and bake in the oven for 25 to 30 minutes. 
  14. Remove the pan from the oven and let the tarte tatin cool slightly.
  15. Place a large plate over the pan and flip the whole thing over.
  16. Garnish with some fresh thyme.

5 heads of endive
1 roll of puff pastry
A large knob of butter
50 g sugar
5 cl balsamic vinegar
A few sprigs of fresh thyme
