Loaded Nachos

Preparation – step by step recipe

  1. Preheat oven to 180°C.
  2. Warm your Beka Evolution frying pan to medium-high heat and cook the shallots and garlic until fragrant.
  3. Add your ground pork and cook until nicely browned. Season with salt, pepper, paprika, and cumin.
  4. Add the sweetcorn and kidney beans to the skillet.
  5. Transfer the mixture to a bowl and wipe the skillet clean.
  6. Add a layer of tortilla chips to the skillet, and layer with meat and cheese, and repeat.
  7. Transfer the skillet to the oven and bake for 15 minutes.
  8. In the meantime, chop the tomatoes, chili pepper, and spring onions.
  9. Peel, deseed, and roughly chop the avocado. Add to a mortar with salt and lime juice and mash until creamy. Add some finely chopped shallots or coriander if desired.
  10. Remove the skillet from the oven and garnish with guacamole, sour cream, tomatoes, spring onion, chili pepper, and coriander.
  11. Serve and enjoy!

500 g ground pork or beef
2 shallots, finely chopped
2 cloves of garlic, minced
1 cup of sweetcorn
1 cup kidney beans
200 g tortilla chips
2 tomatoes
1 ripe avocado
4 spring onions
Juice of ½ lime
1 chili pepper
150 g cheddar cheese
1 cup of coriander
1 cup of sour cream
2 tsp paprika
2 tsp cumin
Salt & pepper to taste
