Brunch Favourite: Deluxe Toast with Vegetables and Goat Cheese

A crispy, golden sandwich filled with a spring-inspired mix of goat cheese, honey, pistachios, and colourful vegetables.

Preparation – step by step recipe

  1. Mix the goat cheese with the honey and spread it on one side of each slice of bread.
  2. Top two slices with bell pepper, spinach/arugula and pistachios. Add beet carpaccio and radish if using.
  3. Place the other slices on top and press down gently.
  4. Heat your Stark frying pan over medium heat and melt 1 tsp of butter. Toast the sandwiches on both sides until golden brown and crispy (about 3–4 minutes per side).
  5. Cut diagonally and serve immediately.

This sandwich is delicious with a fresh salad or a glass of freshly squeezed orange juice. Perfect for a festive Easter breakfast or brunch!

Ingredients

  • 4 slices of sturdy bread (e.g. sourdough or whole grain)
  • 100 g soft oat cheese
  • 1 tbsp honey
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1 handful of fresh spinach or arugula
  • 1 tbsp chopped pistachios
  • 2 tsp butter (for the pan)

Optional — for extra colour & crunch

  • 4 slices of beet carpaccio (for a pink twist!)
  • Thin slices of radish
