Instructions
- Preheat the oven to 180 °C (fan) or 200 °C (conventional).
- Line an Evolution stainless steel sauté pan (approx. 24 cm diameter) with baking paper. This prevents sticking and makes it easier to remove the quiche.
- Line the pan with puff pastry. Press the edges firmly and prick the base with a fork. Optional: brush the base with a thin layer of mustard for extra flavour.
- Prepare the filling: whisk the eggs with the cream, add salt, pepper and half the oregano.
- Sprinkle half the Gruyère over the pastry. Arrange the goat cheese slices, add the cherry tomatoes and gently press them into the cheese. Pour the egg mixture over. Top with the remaining Gruyère, oregano and chili flakes if desired.
- Place the pan in the oven and bake for 35–40 minutes, until the centre is set and the top is golden brown.
- Let cool slightly. Garnish with fresh parsley and serve warm or lukewarm with a crisp salad.
