Mediterranean mussel pan with baby potatoes

A simple, flavourful mussel dish with Mediterranean touches. The combination of baby potatoes, bell pepper and fresh herbs makes this an ideal recipe when you want something delicious on the table without spending too much time. Perfect to serve straight from the pan.

Preparation – step by step recipe

  1. Heat the olive oil in a Savor frying pan over medium heat. Add the baby potatoes and cook until golden brown and lightly crispy.
  2. Add the onion and garlic, and cook briefly until softened and translucent. Stir in the bell pepper and cook for another 3–4 minutes.
  3. Pour in the white wine and let it reduce slightly (1–2 minutes).
  4. Add the mussels, cover, and let them steam for 5–7 minutes. Shake the pan occasionally until all the mussels have opened.
  5. Finish with fresh herbs, lemon juice, pepper, and a pinch of salt if needed.

  • 1 kg mussels (well rinsed)
  • 400 g baby potatoes (pre-cooked or parboiled)
  • 1 red bell pepper (sliced into strips)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 100 ml white wine
  • 2 tbsp olive oil
  • A handful of fresh parsley
  • A few sprigs of coriander (optional, for freshness)
  • Juice of ½ lemon + wedges
  • Salt & pepper
