Preparation – step by step recipe

  1. Start by mixing the flours, yeast and salt.
  2. Add the egg and milk, then whisk into a smooth batter.
  3. Let the batter rest for 30 minutes.
  4. Heat the BEKA blini pan with a little butter.
  5. Cook small spoonfuls of batter until golden brown.
  6. Flip them and cook briefly on the other side.
  7. Top each blini with two thin slices of apple, a piece of blue cheese and some celery. Finish with pepper and a drop of honey.

Ingredients

For the blinis:

  • 100g buckwheat flour
  • 100g wheat flour
  • 1 egg
  • 200ml milk
  • 1tsp dry yeast
  • A pinch of salt
  • Butter or oil for frying

For the topping:

  • 1 green apple, thinly sliced
  • 50 g blue cheese (e.g., Roquefort or Gorgonzola)
  • 1 celery stalk, thinly sliced
  • Freshly ground black pepper
  • Honey or olive oil (optional)
