  1. Toast the pine nuts in a dry pan until golden. Set aside.

  2. Heat 1 tbsp olive oil in a large frying pan and cook the bacon until crispy. Drain on paper towels.

  3. Add the remaining oil and fry the gnocchi for 5–7 minutes until golden and lightly crisp.

  4. Stir in the garlic and cook for 1 minute. Add the spinach and let it wilt.

  5. Return the bacon to the pan, season with salt and pepper.

  6. Sprinkle with the toasted pine nuts and serve immediately.
