Preparation – step by step recipe
- Toast the pine nuts in a dry pan until golden. Set aside.
- Heat 1 tbsp olive oil in a large frying pan and cook the bacon until crispy. Drain on paper towels.
- Add the remaining oil and fry the gnocchi for 5–7 minutes until golden and lightly crisp.
- Stir in the garlic and cook for 1 minute. Add the spinach and let it wilt.
- Return the bacon to the pan, season with salt and pepper.
- Sprinkle with the toasted pine nuts and serve immediately.
