This Italian bruschetta pairs sweet roasted cherry tomatoes with creamy, gently warmed burrata. Made in the Evolution stainless steel pan, from oven to table, it’s the perfect recipe for a summer appetizer, a tapas-style bite, or a quick lunch packed with flavour.

Preparation – step by step recipe

  1. Preheat the oven to 200°C.

  2. Place the vine tomatoes in the Evolution casserole and drizzle with olive oil. Season with salt and pepper.

  3. Roast the tomatoes for 12–15 minutes until soft and lightly caramelised.

  4. Remove the pan from the oven, gently nestle the burrata between the warm tomatoes and let sit for 1–2 minutes to warm slightly.

  5. Meanwhile, toast the bread slices in a grill pan or toaster.

  6. Serve the tomatoes and warm burrata on the toasted bread and finish with fresh basil.
