Perfect blinis

Light and fluffy blinis are best made in a dedicated blini pan. Thanks to even heat and round molds, you get perfectly shaped mini pancakes — ideal for festive sweet or savoury toppings.

Preparation – step by step recipe

  • Mix the lukewarm milk and water with sugar and yeast. 

  • Let sit for 10 minutes until slightly foamy. 

  • Add flour and salt, whisk until smooth. 

  • Add the egg and melted butter. 

  • Mix well, cover with a cloth and let rise for 1 hour in a warm place. 

  • Heat a pan with a bit of butter. Fill each of the four blini molds with a spoonful of batter. 

  • Cook over medium heat until bubbles form and the bottom is golden. Flip and cook for 1 more minute. 

Ready to serve! 

Go savoury with sour cream, smoked salmon & dill — or sweet with honey, jam, powdered sugar or crème fraîche and berries. 

These blinis are perfect for brunch or appetizers, and also make a great base for a fried egg in your blini pan. One pan, endless possibilities — from elegant to everyday.

200 ml lukewarm milk 

100 ml lukewarm water 

1 egg 

150 g buckwheat flour (or 50/50 buckwheat & wheat flour) 

1 tsp sugar 

½ tsp salt 

½ sachet dry yeast (approx. 3.5 g) or 10 g fresh yeast 

1 tbsp melted butter (plus extra for frying)
