Preparation – step by step recipe
- Cook noodles according to packet instructions. Drain and rinse briefly under cold water.
- Heat peanut oil in a non-stick wok. Stir-fry the scampi for 2–3 minutes until pink and cooked through. Remove and set aside.
- Add snow peas to the wok and stir-fry for 2 minutes. Add chili and spring onion, stir-fry for 1 more minute.
- Return noodles to the wok with soy sauce, oyster sauce and sesame oil. Toss well.
- Add scampi back in, combine and heat through.
- Garnish with fresh coriander and serve immediately.
