Spicy wok with scampi & snow peas

Preparation – step by step recipe

  1. Cook noodles according to packet instructions. Drain and rinse briefly under cold water.

  2. Heat peanut oil in a non-stick wok. Stir-fry the scampi for 2–3 minutes until pink and cooked through. Remove and set aside.

  3. Add snow peas to the wok and stir-fry for 2 minutes. Add chili and spring onion, stir-fry for 1 more minute.

  4. Return noodles to the wok with soy sauce, oyster sauce and sesame oil. Toss well.

  5. Add scampi back in, combine and heat through.

  6. Garnish with fresh coriander and serve immediately.

300 g scampi, peeled but tails on

200 g snow peas

2 red chilies, thinly sliced

2 spring onions, chopped

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp sesame oil

2 tbsp peanut oil

Fresh coriander for garnish

Pepper to taste
