Preparation – step by step recipe
- Heat olive oil in the Evolution pan and sauté onion and garlic until soft.
- Add the bell pepper and cook briefly. Stir in tomato paste and chopped tomatoes, then let simmer.
- Add smoked paprika, saffron, and bay leaf. Deglaze with fish stock or white wine and let reduce for 10 minutes.
- Add fish pieces and cook gently for 5 minutes. Then, add prawns, mussels, and clams. Season with salt and pepper.
- Remove the side handles from the pan. Place in a preheated oven at 200°C for 10–12 minutes until the shellfish open and everything is fully cooked.
- Finish with fresh parsley and serve with lemon wedges alongside rustic bread or potatoes.
