Preparation – step by step recipe

  1. Heat olive oil in the Evolution pan and sauté onion and garlic until soft.
  2. Add the bell pepper and cook briefly. Stir in tomato paste and chopped tomatoes, then let simmer.
  3. Add smoked paprika, saffron, and bay leaf. Deglaze with fish stock or white wine and let reduce for 10 minutes.
  4. Add fish pieces and cook gently for 5 minutes. Then, add prawns, mussels, and clams. Season with salt and pepper.
  5. Remove the side handles from the pan. Place in a preheated oven at 200°C for 10–12 minutes until the shellfish open and everything is fully cooked.
  6. Finish with fresh parsley and serve with lemon wedges alongside rustic bread or potatoes.

  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (diced)
  • 2 ripe tomatoes (peeled and chopped)
  • 150 ml fish stock or white wine
  • 1 tbsp tomato paste
  • 1/2 tsp smoked paprika (pimentón)
  • 1 pinch saffron
  • 1 bay leaf
  • Olive oil
  • Salt and pepper
  • Fresh parsley (for garnish)
